Tuesday Coffee with Tonya and Weekly Gift Card Giveaway

Well heck. I thought for sure I'd be writing this from Detroit, Michigan instead of my couch in Kentucky. I was even booked in the casino! Which I dreamed I'd won the big million dollar prize....


Why would I be hoping to be in Detroit and not sunny Florida? The Horizon League Basketball Tournament rooting on Northern Kentucky University since we were ranked number one and were the season champs.

The pictures above is the last home game. My parents and my sister and brother-in-law went to every game to root on the Norse, specifically, Jack!

All of us were so excited to go to Detroit because last year we won the entire tournament and played UK in the NCAA tournament. Boy...was I torn last year because of my love of UK, but both are my alma mater. Still....I rooted for NKU last year, and we lost to UK. We didn't care! We got to the big dance!

Guess what....NKU lost to the number 8 and we are still so shocked and stunned. We won't get a bid to the NCAA, but we do have a spot at the NIT. So maybe I'll be headed there.

Regardless, the team is heartbroken and I'm heartbroken for Jack. The games took up a lot of time and we sure did have a lot of fun.

Thank you to all who have emailed me about Scooter. He was diagnosed with Cushings Disease and Diabetes. It's really taken us for a spin and not in a great direction. We can't seem to get his blood sugar to normal range and he's had a few diabetic episodes. A couple have landed us right back in the vet's office and some we've gotten under control at home. Charlie still hasn't gotten use to Scooter being sick! He's been sniffing poor Scoot-Scoot all over this house.



I will get it back on track! It's just gonna take a few more pricks in his ear, a lot more blood tests, and some more insulin or peanut butter.....

Easter is in April and the Derby is in May! But here in Kentucky and the south, we don't have Easter without the Derby pie!

Kentucky Derby Pie
(from my mama~Linda Lowry)
My mama’s Derby Pie is smack your mama good! It’s a southern pie with walnuts and chocolate chips. You can use pecans in substitute for the walnuts, but I really like my walnuts!

Ingredients: ½ cup melted butter
1 cup sugar ½ cup flour 2 beaten eggs 1 tsp. vanilla extract ¾ cup Walnuts or pecans (your choice not both!) ¾ cup chocolate chips (or more if you really want it gooey!)
Directions Mix in the order that’s written under the ingredients. This is very important. Pour the mixture into an unbaked 9 inch pie shell. Bake at 350° for 30 minutes.
